If violist Che-Yen (“Brian”) Chen weren't so wild about Taiwanese food, he might never have founded the prize-winning Formosa Quartet. “It was a combination of my passion for quartet playing and my passion for the food in Taiwan,” says the 30-year-old native of Tapei, who has a special reverence for deep-fried meatballs slathered with sauces and sprinkled with cilantro.
